Ingredients
- 700g skirt or flank steak
- 1 bottle Sweet Baby Ray's Original BBQ Sauce
- 4 tablespoons butter, divided
- 2 tablespoons flour
- 375ml cups milk
- 225g Gorgonzola cheese crumbled
- Half onion, diced finely
- One can of baked beans
- Diced chillis
- 1 bag corn tortilla chips
Method
- Step 1
Preheat the oven. - Step 2
Bake in the oven as per the directions. - Step 3
Add 2 tablespoons of butter to a pan and cook the diced onions for about 10 minutes stirring very so often. - Step 4
Melt the butter in a large pan and add the flour - Step 5
Whisk until smooth and gradually add the milk whisking all the time until bubbling. - Step 6
Add the cheese and whisk again. Turn off the heat and set aside. - Step 7
Preheat your grill and place the steak on the hot grates. - Step 8
Sear the steak for about 3-4 minutes on one side and then turn it over and repeat until medium-rare. - Step 9
Brush the steak generously with the BBQ sauce on both sides - Step 10
Transfer the steak to a plate and cover with foil, let rest for a few minutes then slice thinly into small strips. - Step 11
Warm the beans in a microwave-safe bowl. - Step 12
Lay some tortilla chips on a large plate or sheet pan. - Step 13
Top with some beans, onion, diced chilli, steak and cheese sauce.
